Grilled Mushroom Burger - a quick solution for a meatless grill! 🍔
It's picnic season! What are we gonna throw on the grill for those of us who don't eat meat? Today we've got tons of options. From veggie patties to those fake meat patties that taste surprisingly convincing...
But if none of that tickles our fancy and we want something lighter, mushrooms are a great option. They're already meaty in texture, and with soy sauce and garlic, they taste amazing.
We can even make homemade patties from legumes if we have the time. I've got two recipes for bean burgers in my cookbook. But if you wanna save as much time as possible and enjoy the picnic instead of slaving away in the kitchen, make this:
For a mushroom "patty":
Large Portobello Mushrooms - 4x
Soy Sauce - 4 teaspoons
Garlic Powder - 1/2 teaspoon
Pepper - to taste
Clean the mushrooms, remove the stems, and dry them. Mix everything in a bowl. Place them on the grill with the hole facing up. Pour what's left in the bowl into the hole. Grill for 10 minutes.
For the garlic "mayo" sauce:
Cashews - 3 tablespoons
Boiling Water - ⅓ cup
Soak for 10 minutes, then add:
Lemon Juice - 1 tablespoon
Mustard - 1 teaspoon
Garlic - 1 clove
Salt - 1/2 teaspoon, or to taste
Blend until smooth with an immersion blender or a regular blender.
Spread the prepared sauce on the burger buns, then add the grilled mushrooms and veggies of your choice. I added some onion slices, tomato, and lettuce. Ketchup works too.
It's a simple, quick, and delicious solution for the grill!
