I've been feeling overwhelmed looking at my kitchen table and sunroom that have 20 lbs of peaches, 70 lbs of tomatoes and 2 5 gallon buckets of apples. Watching your video gives me inspiration to just get it all done

The reason your raw pack peaches float is because the raw peaches still have air trapped within the fruit. Cooking them in the syrup you are going to pack them in ahead of time releases the trapped air so they don't float. They shrink during the process and yes, you can pack more fruit in the jars to can. It’s a matter of preference. I prefer raw pack over hot pack. I want my peaches cooked the least amount of time possible.

I NEVER time peaches (or tomatoes) when I blanch them to peel. The peaches tell me when they are ready to come out of the water. The skin starts to pull away where I put the X when it is ready. Every fruit is an individual. Some are ready before 30 seconds while others need 120 seconds.

25 feet of grease! That sounds unreal, I did not know people actually poured grease down the drain (it was drilled into me by my parents to never do so.)
My dishwasher stopped working too! (Our motor died). The joys and perils of modern living. Really enjoyed, as always, all the preserving and canning steps.

i know it was already mentioned but for anyone who may have missed it: it’s extremely important to NEVER fill your blender more than halfway if you’re blending hot liquids. keep your blender lid on and never lean over the blender when you turn it on unless you want 2nd degree burns. becky you are so lucky you didn’t get hurt!

Hey darling! You are accomplishing sooo much in so many areas. I only have one suggestion about your canning. I noticed that you were using a metal butter knife to debubble your canned peaches. I was taught to never use anything metal in your jars. You can easily Crack or chip your jar and never know that it cracked, not until it breaks while it's processing. You work so hard, I would hate for that to happen to you. Pam in South Carolina

Everything looks so good! I just finished canning 50 quarts of peaches myself. I tried something different with my peels and pits this year- I used my steamer and created peach nectar to make peach jelly and juice to drink.

Hi Becky, I preserved some carrots today 1st time! I did the blanch /cold bath / freeze method! With my grand baby here on top of that! I feel productive today ! I just love your videos! Thank you for the motivation

I just gotta say it. You are one of my FAVORITE youtubers. I am 23, about to graduate nursing school (NICU here I come! Already got a job!) and I cannot wait to be able to start my garden. It's gonna have to start small, but I have huge aspirations to one day be able to provide for myself and eventually my family in the same way that you do. I will be giving myself a space to enjoy that is outside, in the sun, in nature, an amazing form of exercise and fresh produce that I know exactly where it came from and how it was handled. I have found you to be a huge source of inspiration for me and I really wish you guys nothing but the best :)

Since it's still gonna be quite some time until I can afford enough land of my own to have a nice garden like this, I have been doing as much research and taking as many notes as I can on how to care for and process different produce so that it's not as big of a hurdle once I finally get to start :)

You are SUCH an inspiration :)
