Boss OC-3 Super Octave

The Boss OC-3 Super Octave picks up where the OC-2 left of in terms of accuracy and variety of sub-octave tones. In addition to classic Boss Octaver sounds (1 & 2 octaves down), the OC-3 can be played with all strings in Polyphonic mode. The cutoff adjustment in Poly mode applies the octave effect to lower strings while higher frequencies are free to be played and chorded normally. Plus, the Boss OC-3 Super Octave incorporates an overdrive mode for powerful riffs and layered solos.

I have this pedal and use it a lot. I'll try and explain how it knows which strings/notes to effect. When the pedal is in polyphonic mode the third knob lets you dial in the range of notes you want to effect, so you can have it effect just the high strings or just the low strings (like in the video). If you changed guitars, to a lower tuning, you would have to bend down and dial in the range depending on what you wanted it to do.

I have this pedal and use it a lot (bi-amped, goes to bassamp), it's a leave-on type pedal in my setup. You buy this pedal simply for it's polyphonic mode, works pretty good but the tracking isn't always glitch free. Especially with the range-knob turned further, for my music I leave it to add it's effect to just the first (baritone) string. EHX octave pedals will do a better job at tracking and octave-effects over the whole range of strings.
