This sausage is meant to be sliced before cooking, allowing the fats to render and getting a good char on each piece. You lost a lot of the experience of this wonderful sausage by cooking it as a log

I haven't had linguica in soooo long. It looks good, but it's a little bit wasted on this reviewer.

I'd love to try this sausage. I don't know if I can get it on the East coast. We have Gaspar's linguica here in New England. It's very good! There are many meals centered around linguica like: Kale soup or a nice sandwich on a roll with mustard. Portuguese roast chicken or beef with linguica, tomatoes, and veggies is delicious!
