Elevate your breakfast with this delicious recipe for Baked Butter Beans on Toast! Creamy butter beans combined with sun-dried tomatoes on crispy sourdough makes for a satisfying and gourmet breakfast or brunch. Perfect for starting your day on a high note!
Ingredients:
2 slices sourdough bread, toasted
200g dried butter beans, soaked and cooked (or 2 tins, drained)
1 tbsp vegan butter or olive oil
75g sun-dried tomatoes, chopped
2 cloves garlic, minced
125 ml vegetable broth
4 tbsp vegan cream cheese
Juice of 1/2 lemon
Fresh parsley and basil
Salt and pepper, to taste
Instructions:
Prep the Beans: Rinse and soak dried butter beans overnight. Drain and cook in fresh water until tender, then drain again.
Cook the Mixture: Heat vegan butter or olive oil in a pan. Sauté garlic until fragrant. Add cooked beans, sun-dried tomatoes, and vegetable broth. Simmer until beans are tender and broth reduces.
Toast the Bread: While beans cook, toast sourdough slices until golden.
Assemble: Spread vegan cream cheese on toasted sourdough. Top with the butter bean mixture. Drizzle with lemon juice and garnish with fresh parsley, basil, and a sprinkle of pumpkin seeds.
