Ingredients:
For marination

1 kg chicken
1/2 tsp turmeric
1/2 tsp salt
1/2 lemon

For preparation:
Dry roast
2 tbsp pepper
1 tsp fennel
1 tsp cumin seeds
2 tbsp coriander seeds
2 dry red chilli

For preparation:
2 tbsp oil
1 inch cinnamon stick
2 cardamom
4 cloves
Bay leaf
2 onion
2 tbsp ginger garlic paste
1 tsp salt
1/4 tsp garam masala
2 tomatoes paste
Curry leaves (optional)
1 cup water (200 ml )
Coriander leaves

Ingredients:
1 kg chicken, cut into pieces
1/2 tsp turmeric powder
1/2 tsp salt
1/2 lemon
2 tbsp whole black pepper
1 tbsp coriander seeds
2 dried red chilies
1 tsp cumin seeds
1 tsp fennel seeds
2 tbsp oil
1 cinnamon stick
4 cloves
2 cardamom pods
1 bay leaf, broken
2 finely chopped onions
2 tbsp ginger-garlic paste
2 tomatoes, ground to a paste
1/4 tsp garam masala
Curry leaves
Fresh coriander leaves for garnish
Instructions:
1) Marinate the Chicken:
In a bowl, mix 1 kg chicken pieces with 1/2 tsp turmeric powder, 1/2 tsp salt, and the juice of 1/2 lemon. Set aside.

2) Prepare the Spice Powder:
Heat a pan on medium heat.
Add 2 tbsp whole black pepper, 1 tbsp coriander seeds, 2 dried red chilies, 1 tsp cumin seeds, and 1 tsp fennel seeds.
Roast for 2-3 minutes until the spices are brown and fragrant.
Let them cool, then grind into a fine powder using a grinder or mixer. Set aside.

3) Cook the Chicken:
Heat 2 tbsp oil in a pan over medium heat.
Add 1 cinnamon stick, 4 cloves, 2 cardamom pods, and 1 broken bay leaf. Fry for 30 seconds.
Add 2 finely chopped onions and 1/2 tsp salt. Sauté until the onions are golden brown.
Add 2 tbsp ginger-garlic paste and sauté for 1 minute.
Add the marinated chicken and sauté for 5 minutes.
Add the ground tomato paste and cook for 2 minutes.
Add the prepared spice powder, 1/4 tsp garam masala, and 1/2 tsp salt. Mix well.
Add 1 cup of water and bring to a boil.
Add a few curry leaves.
Cover and cook for 15 minutes.
Garnish with fresh coriander leaves
Enjoy your pepper chicken!
