How to make a Trini Style Chunky Lime Pepper Sauce

INGREDIENTS (Traditional Trini Lime Pepper Sauce)
• 8 to 10 Scotch Bonnet Peppers
(ROUGHLY CHOPPED)
• 2 Limes
(CUT INTO SMALL WEDGES )
• 3 to 5 Garlic Cloves
• 1 Sm. Carrot
(CUT INTO THIN STRIPS)
• 1 to 1½TBS Sea Salt
• 1Cup to 1¼Cups White Vinegar
YOU'LL NEED 1 GLASS BOTTLE
Method:
1) Cut Lime into eight wedges and remove seed.
2) Boil the Lime until tender (ABOUT 15 to 20mins). Then drain and rinse in cold water and pat them with a paper towel.
3) Cut up the pepper into wedges.
Cut the carrots into thin strips
Roughly chopped the garlic cloves.
4) ADD the ingredients into a clean and dry glass bottle alternating them then add the salt add the vinegar and until it covers the ingredients.
5) Cover tightly give it a shake and place in the sun for 2 to 3 days or even a week that will help bring out those flavors. ENJOY!.
