Sign up for the Intensive Wagashi & Mochi Making Course:
Join wagashi artist Irie Mai for an online cooking course that will introduce you to the art of wagashi. Over the course of 24 video lectures, you’ll learn how to make wagashi such as nerikiri, mochi, and the Japanese raindrop cake. While Japanese sweets, nerikiri especially, may look complex, they are actually quite easy to make in your own home kitchen. They’re also plant-based, so even vegans can try wagashi art.
You’ll start by making the nerikiri wagashi dough from scratch using beans, glutinous rice, and sugar. Then, Mai-san will introduce various techniques to color and shape your dough and you’ll learn how to make 4 nerikiri wagashi motifs. Next, you’ll make two types of mochi: the traditional ichigo daifuku (strawberry mochi) and mizu shingen mochi, the Japanese raindrop cake. Lastly, Mai-san will teach you how to make the perfect cup of matcha tea to pair with these Japanese sweets.
