Regarding many comments :
Thyme, Rosemary, Marjoram, Oregano, Basil... I intensively use dried herbs, and I have entire bags of those in my cupboards. So, why aren't they in the video ? Well, as most dictionnaries exclude dried herbs from Spice's definition ( questionable? maybe), I chose to kept them out on purpose. It's just about being thorough.
Anyways, I heard your voices, and I'll make a special vid about it. :)

Dried tangerine peels: a must have for Cantonese cooking. It is slightly citrusy but more earthy. It is not fresh like lemon or lime zest. It is quite aromatic even though it has a tiny bit of bitterness of the citrus pith. My mum and granny use it in plain rice porridge or steamed fish. It is also used as a medicine for cough.

I'll add a brazilian touch to your list, Urucum is a native spice from Amazonia, it doesn't add much to the taste but it's a must for a beautiful red color on any dish! I usually add a splash when I'm doing a chilli con carne so it will lose that brownish color and become more vibrant with a beautiful red!

Merci, Alex! Growing up, my parents always used the same, old, boring spices; paprika, pepper, garlic powder but as I've learned to cook over the past few years, my top favorite spices are definitely coriander, red chili flakes, and fennel seeds!

Buying a mortar and pestle was one of the best culinary decisions I ever took. There's always a million possibilities with spices. I will definitely use this video as a starting point and experiment with new pairings in the future. Thanks Alex!

My favourite spice is ground fennel. I like to heat up the seeds on a pan, along with rainbow peppercorns and coriander seeds, then crush them in a mortar and pestle. Perfect as a garnish on pasta!

Very well, i like to use also mustard seeds, ginger powder, cloves and paprica. I living in Brazil, here we used mostly cumin and urucun powder.

My greatest discovery was my local Asian supermarket - in the regular supermarkets, two star anise pods cost $4....but at the Asian supermarket, a half-kilo bag was only $6! And they had so much more flavour, too! ^_^
