The BEST Cookies and Cream Cupcakes!

Tools:
INGREDIENTS:
1 2/3 cups all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, room temperature
3/4 cup sugar
1 large egg, room temperature
1/4 cup plain yogurt (I use greek yogurt), room temperature
3/4 cup milk, room temperature
2 tsp vanilla extract
12-15 crushed oreos
12-15 whole oreos
Makes roughly 12-15 cupcakes.
1. Preheat the oven to 350 degrees F
2. Line a muffin tin with cupcake liners.
3. In a bowl, mix together the flour, baking powder, baking soda, and salt together. Set aside.
4. Beat ½ cup butter and sugar until light and creamy. Add in the egg and beat well. Add in the yogurt and beat well again. Alternate between adding the flour and milk in three additions, beginning and ending with the flour. Fold in 2 teaspoons of vanilla and a little over half of the crushed Oreos..
5. Place an Oreo at the bottom of each cupcake liner. Evenly divide the batter among the liners over the Oreos. It may seem as thought he liners are over filled, but they will be okay.
6. Bake for about 18 - 20 minutes, or until the tops spring back when gently touched. Take out and allow to cool completely.
7. Top with your favorite frosting, I chose vanilla buttercream for this video
