I'd argue the Jedi leadership trusted Sentinels a lot. What Sentinels were tasked with doing was extremely important and could realistically lead many Jedi to the Dark Side, for the Council to give them these tasks and the autonomy to do them as they saw fit has to mean the Council trusted them...

So they were the actual keepers of the peace. While other Jedi probably just wandered around doing nothing

Jedi Sentinels were more balanced, capable, and reliable compared to their Knight counterparts. Sentinels were the ones who connected with the galaxy and its people that occupied it, choosing a worldly and truly helpful existence over a detached and closed off existence. I think that the Force may have even, in a way, showed them favor bc they chose a path that aligned with its purpose in the Star Wars Universe.
