Step by step instruction on how to sharpen a knife. I use a combination stone called an oil stone. This type of stone can be used dry to get really sharp knives. Sharpening my knives work really well with this stone. For this demonstration, I sharpen my Chinese cleaver. This stone is better than the cheap stones and not as expensive as some as some of the more expensive stones. The cost was about $20 Canadian a few years ago. Definitely well worth the cost.

HOW TO SHARPEN A KNIFE
You can use petroleum jelly if the stone cuts too fast. This is a 2 step process for sharpening knives. The stone has two sides. The first side is for fast cutting for the initial coarse sharpening. Then the stone is turned over for the polishing side. The polishing stone removes the rough edges and the burrs. This stone is also called a carborundum stone. It is made of silicon carbide. This type of stone has good overall performance for cutting knives and not too expensive compared to other sharpening stones. It is a great stone for sharpening knives for cooking. I like sharpening my cleaver knife with this stone.
