How To Make Ga Kenkey

Ingredients:
10 lb fermented corn dough
salt to taste
dried corn husk to wrap kenkey
Directions:
Mix 6 lb fermented corn dough with 1.5 litres of water.
Add salt to taste, then cook on the stove top to form banku.
Scoop banku into a larger bowl, add remaining 4 lb of corn dough and mix until a uniform paste is formed.
Form into balls and wrap with corn husk.
Line base of a pot with some corn husk, the place wrapped kenkey over them, ensuring they are snuggly arranged. Add hot water to fill the pot abut 2/3 full, then cover with remaining corn husk, then a kitchen towel and the lid. Occasionally check and add more hot water as needed. Boil until kenkey is soft.
