Fluffy sponge cake filled with thick, not-too-sweet chantilly cream and fresh strawberries.

Recipe:
Chantilly cream (frosting and filling)
8 oz cream cheese
8 oz mascarpone cheese
1/4 c powdered sugar (adjustable)
2 c whipping cream
splash of vanilla extract
1. In a mixing bowl, mix cream cheese until smooth. Then add the mascarpone and mix just until combined.
2. Scrape down bowl, add powdered sugar and mix just until combined.
3. Pour in whipping cream and vanilla extract. Beat with a hand mixer until stiff peaks form.
Sponge cake
Use a 6 inch pan with this half of this recipe ( or you can make the full recipe and have 2 layers. In the video, I used one layer only and cut it in half for a smaller cake).
2 Egg yolks
4 Egg whites + cream of tartar
120 g (½ cup + 2 tbsp) Sugar
110 g (7 tbsp) Milk
45 g (3 tbsp) Butter
120 g (¾ cup + 1 tbsp) All purpose flour
1 tsp Baking powder
1 tsp Vanilla extract
Pinch of salt
Strawberries for the filling
How:
In a large bowl, beat the egg whites with cream of tartar. Once they’ve begun to foam, add the sugar one tablespoon at a time and whip egg whites until stiff peaks.
In another bowl mix milk, butter, egg yolks, vanilla and the sifted dry ingredients, and stir to combine.
Gently fold both mixtures together without deflating the egg whites.
Pour the batter in two greased 6 inch pans lined with parchment paper, and bake the cakes in a preheated oven at 160 °C (320 °F) until tooth pick comes out with few crumbs.
Allow to cool completely.
Wrap and place in the fridge.
Assemble:
1. To have a cake like in the video, cut the cake layer in half. It will be thin.
2. Spread a thin layer of chantilly cream on the cake. Add sliced strawberries.
3. Spread more cream to cover the strawberries (as much or little as you like)
4. Place the next layer on top.
5. Crumb coat, frost with the rest of the cream as desired.
