Flammkuchen - an incredibly delicious thin crust pizza that originates from the southern part of Germany. This traditional recipe takes some time to cook due to the caramelizing of the onions and the cooking of the bacon, but my oh my is it worth it. The dough is straight easy to make since it doesn't require rest time to leaven, which makes it super dope. 2 cups (250g) AP flour
1 cup (125 mL) water
2 tbsp olive oil
salt
bacon
crème fraîche

oh god my german heart is bleeding... the dough was spot on. the creme fraiche was spot on. But: no bacon! we use a dry cured ham that isnt smoked, is more lean than bacon and we dont pre-fry it. instead just chop it into small 2 cubic- millimeter cubes. the onions arent prefried either, just slice as thin as humanly possible. And use more creme fraiche! other than that i hope it was still tasty, although not traditional

OK this is wrong. Flàmmeküeche is Alsatian and absolutely not German, it started in the surroundings of Strasbourg mostly west and a little north. No one else was eating that before it became popular in the 80s. That's where I come from. My grandfather who was from around Colmar (about 40 miles south from Strasbourg) didn't try it before he was well over 70 because it was foreign to him 🤣 it's very thin bread dough with a mix of whipped cheese, cream, rapeseed oil, onions and Speck (local smoked bacon). It's a dish farm workers ate after working in the fields for dinner. They bought the dough from the baker and the rest they had at home and they baked that in their oven where the Flàmmeküeche was surrounded by burning wood... That's what gives it its unique taste. Most reputable restaurants serving this in my region offer the version cooked in those special ovens (you can even have one built in your garden or basement) it's only served in the evenings as the oven needs many hours to be properly hot to cook it 😁

Had real German pizza back in Augsburg 1976. Cant remember what was in it because of the German beer. But I remember it did not look like that. You cut it with a knife and fork and it was the most delicious pizza I can ever remember in my almost 66 years. I remember maybe green peppers and sausage for sure. Somebody help me find our how to make this.

This basic recipe can tolerate a lot of variations in the toppings:
Ham slices, grated gruyere and sauteed asparagus.
Halved cherry tomatoes, green peppers and prosciutto.
Pesto sauce (instead of creme fraiche), olives and cheese.
Sun dried tomatoes, roasted garlic and red peppers.
Dessert - apple and pear slices with cinnamon sugar.
Limited only by your imagination and good taste. Just don't overdo it, no more than 2-3 toppings...

I think you meant to say caramelize not carmelize. Btw, He didn't let the dough rest to allow the gluten to form.
The pizza looks probably tastes disgusting, especially the dead, slaughtered pigflesh from factories, the number one cause of green house gasses and climate change, no matter one hails from.
