I'd like to see karate in the Olympics as well but it's so intrinsic with problems I just don't know how they would do it. For one, karate is incredibly subjective. It's not like a ball sport where you have one specific goal that's easily defined. Most other Olympic events are defined by number of points and either you get it or you don't. Either way it's clear. It's not always clear in karate. All people really want to see is the fighting anyway. And if that's all they do then it's too similar to TKD. But if you include kata and weapons how do you organize it in such a way to make it point based without subjectivism? Akin to gymnastics, but with gymnastics you have specific techniques you're supposed to hit. Either you do or don't. If you do, did you meet the criteria for it? Your score is based very stringently on that. Kata is a different beast because people may do the same kata. So who did it better? That's all subjective. It's so much harder to judge without arbitration.
