Mutton White Karhai
Serves 4-5
Recipe in English:
Ingredients:
-Mutton mix boti 750 gms
-Pyaz (Onion) sliced 1 large
-Namak (Salt) 1 tsp or to taste
-Darchini (Cinnamon sticks) 2
-Hari elaichi (Green cardamom) 2
-Adrak (Ginger) julienne 1 inch piece
-Pani (Water) 1 & ½ Cups or as required
-Cooking oil 1/4 Cup
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Hari mirch (Green chillies) 3-4
-Dhania powder (Coriander powder) roasted & crushed ½ tbs
-Dahi (Yogurt) whisked 1 Cup
-Safed mirch powder (White pepper powder) 1 tsp
-Kali mirch (Black pepper) crushed 1 tsp
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander)
Directions:
-In wok,add mutton mix boti,onion,salt,cinnamon sticks,green cardamom,ginger,water and mix well,bring it to boil,cover partially and cook on low flame 40-50 minutes or until meat is tender then cook until water is reduced.
-Add cooking oil,ginger garlic paste,cumin seeds and mix well.
-Add green chilies and mix well.
-Add coriander seed and mix well then cook on high flame for 8-10 minutes
-Add yogurt,white pepper powder,black pepper crushed,mix well and cook until oil separates.
-Add fresh coriander.
-Garnish with ginger,fresh coriander & serve!

-Karhai mein mutton mix boti,pyaz,namak,darchini,hari elaichi,adrak aur pani dal ker ache tarhan mix karein aur ubal anay ka bad partially dhak dein aur halki ancch per 40-50 minutes ya ghost gul janay tak paka lein phir pani sukh janay tak paka lein.
-Cooking oil,adrak lehsan paste aur zeera dal ker ache tarhan mix karein.
-Hari mirch dal ker ache tarhan mix ker lein.
-Sabut dhania dal ker ache tarhan mix karein phir tez ancch per 8-10 minutes kliya paka lein.
-Dahi,safed mirch powder aur kali mirch crushed dal ker ache tarhan mix karein aur tez ancch per oil alag hunay tak paka lein.
-Hara dhania dal dein.
-Adrak aur hara dhania sa garnish ker ka serve karein.
