SOMETIMES A FLOP CAN TURN INTO SOMETHING AMAZING, LIKE THESE KETO BROWNIES WITHOUT ANY NUT FLOURS

I accidently stumbled upon this keto brownie recipe when I was testing a recipe for ChocZero. I was trying to make a mochi cake, but instead made brownies. I was amazed at how chewy and fudgy these brownies turned out AND they are nut free! You can even make them dairy free if you wanted by use ghee or coconut oil in place of the butter.

Anyone who tries these brownies will have a hard time believing they are sugar free. They are that good!

KETO BROWNIES
Make 9 large brownies

½ cup inulin powder
¼ cup unflavored protein powder
1 teaspoon egg white powder
½ teaspoon xanthan gum
1 teaspoon salt
½ cup coconut milk
¼ cup monkfruit blend sweetener
¼ cup brown monkfruit sweetener
7 oz sugar free chocolate chips, melted
2 eggs
¼ cup butter, softened
1 teaspoon vanilla

1️⃣ 01:15 - In a large bowl, whisk together inulin powder, protein powder, egg white powder, salt and xanthan gum.
2️⃣ 01:42 - Using an electric mixer on low speed, slowly stir in the coconut milk until combined and a goopy texture forms.
3️⃣ 01:59 - Add monkfruit sweetener and brown monkfruit sweetener. Mix in eggs, butter and vanilla until combined.
4️⃣ 02:21 - Melt chocolate in a small bowl in the microwave at 30 second intervals, stirring in between, until melted. Or melt chocolate using the double boiler method. Add melted chocolate to the bowl and mix to combine.
5️⃣ 02:38 - Scoop brownie batter into the prepare dish and bake at 325 degrees for 30-35 minutes or until brownies are set in the middle.
6️⃣ 02:57 - Let sugar free brownies cool before cutting in to 9 squares. Store at room temperature or the refrigerator for up to 4-5 days.

Not sure if I commented before or not but: BEST BROWNIE RECIPE EVER!! So good that I double it and make it in a 9 x 13 pan. Always a pleaser. Thank you so much for the recipe. BTW, the inulin is used only for these brownies for us, so a bag of it lasts quite a while.

I substituted coconut milk with heavy cream, and I didn't add the egg protein powder (did not have any on hand). Oh my lord, these are THE best keto brownies I've ever had.

These were absolutely amazing. I didn’t have the egg white powder or brown “sugar” so I just used the regular sweetener alternative I had on hand. If this is what they taste like with two substituations, I can’t even imagine how good the original recipe is. Thank you!!

OMG! I am so ready even at 9pm at night to make these brownies. But I will contain myself as I need the chocolate chips and inulin before I can proceed. Thanks for this recipe. If you don't have egg white powder I read you can replace 1 tsp of egg white powder with the white from 1 egg then reduce the liquid in the recipe by 2 tbsp. You could also replace xanthan gum with unflavored gelatin at a 2:1 ratio if you're not vegan. If vegan I'd consider agar agar and use 1:1 ratio with xanthan gum. Of course there's the option of soaking one part chia seeds or flax meal in 2 parts water (hot water for flax). You could probably use any keto friendly protein powder you preferred in place of the pricey ones. Also if you don't have inulin powder Acacia powder should work or some other fiber powder. Just some thoughts. I haven't tried this recipe yet. I just like to know substitutions personally.

I tried this recipe yesterday. After cooking for 30 minutes, mine had some jelly-like consistency. Cooked it for another 10 minutes and it was still jello-ey somehow. Tasted it today. Best keto brownie I've ever made. More of a fudgy texture today. A liiitle bit of aftertaste, i think thats inulin, first time trying that stuff. But wash it down with a nice cup of tea and it's golden.
