The Flying Guilloutine was added in 2012 in the triad pack as part of a promotion for the game sleeping dogs
Unlike the sandman the Guilloutine can't be picked up off the floor
as seen in the concept art it was at some point intended to be a melee weapon
since 2017 when jungle inferno dropped the flying Guilloutine no longer crits stunned players
nerfing the clever sandman combo
if you keep holding down your mouse button after throwing the Guilloutine scout won't switch weapons
for everyone else it will look like you still have your Guilloutine ready
reflect kills use the standard flamethrower kill icon
The Chinese Letters on The Cleaver spell Dead Meat
the Guilloutine can't be thrown under water

The only time I use the guillotine is when I do the amazingly funny fast fish combo. Baby face's blaster, guillotine and fish. You become fast and do the funny fish.

Also I'm pretty sure that the "Dead Meat" is an easter egg to Hotline Miami, since the Biker uses a guillotine as his main weapon and one of his most famous lines is "You're dead meat"
