Ingredients:
🍠 2 small sweet potatoes (about 4 cups diced)
🍽️ 3 cups cooked chickpeas
🫒 1 tbsp olive oil
🌶️ 1 tbsp harissa (adjust to taste)
🌾 1 cup dry quinoa
🌿 6 cups kale
🌱 2 cups edamame (defrosted)
🥑 2 avocados, diced
🎃 2 tbsp pumpkin seeds
🍯 3 tbsp tahini
🧡 1/2 tbsp turmeric
🍁 1 tbsp agave syrup
🍋 Juice of 1 lemon
💧 Water (as needed)
🧂 Pinch of salt
Instructions:
Preheat the oven to 350°F (180°C).
Combine the olive oil and harissa, then divide it in two. Toss the sweet potatoes with half of the harissa oil and a pinch of salt. Roast in the oven for 20 minutes.
Toss the chickpeas with the remaining half of the harissa oil. Add them to the sweet potato tray and continue to cook for another 20 minutes.
Rinse the quinoa well and cook it according to the package instructions.
Massage the kale with a pinch of salt and half a teaspoon of olive oil.
Blend all the dressing ingredients until smooth (or whisk them together).
Divide all the ingredients between 4 bowls.
