There are no hypersonic anti air missiles and jets will evade radar missiles with chaff and notching and ir missiles with flares. Modern jets also used electronic warfare and jammers.

This is not how it works. You generally notch it, by flying at 90 deg from it, and so bleed it off energy and fuel. Youll also go defensive low altitude so the air is thicker and it bleeds more energy. Counter measures are not very effective against modern missiles. But yeah, if youre too close amd conditions are poor, there's very little chance to escape a modern missile. Thats why you dont get in proper kill range.
