DORSET APPLE CAKE Recipe from Helen at @40plusnotgivingupyet on Instagram:
225g self raising flour
1tsp baking powder
200g castor sugar
2 eggs
150g melted butter
250g diced apples
25g flaked almond (not obligatory)

preheat oven to 160°c
grease 1 round cake tin

Mix everything together except the apples.
Spread half onto cake tin. Heap the sliced apples in the centre and spread the rest of the cake mix over it, trying to completely cover it.
Sprinkle flaked almonds over the top.
Bake for 1 1/4 hours 160°c

LEMON MERINGUE PIE from The Gentle Art of Domesticity by Jane Brocket:
250g digestive biscuits
125g butter (melted)
4 large eggs
400g condensed milk
juice of 4-5 lemons
125g castor sugar

Crush biscuits and mix with the melted butter, press into cake tin and set aside.
Separate eggs, yolks and whites into different bowls.
In another bowl combine the lemon juice and condensed milk, whisk until smooth, then add yolks and whisk again. Set aside.
Whisk the egg whites until soft peaks form then add the sugar and whisk until glossy.
Assemble: Pour the lemon mix onto the biscuit base and gently scoop the meringue mix on top. Bake for 30-40 minutes at 170c.

Watching with my mum today, Nicki and Carlo always make her day. To quote my mum who was aghast..."What kind of sodding cow says someone's food looks horrible?" "You can think it but how rude is it to say it at a potluck?" She hopes the cow is reading her comments 😁😁😁Mum is feisty today at 87 yrs old. I am loving the pool work...Carlo is amazing at what he can do. The fountain, whichever you choose is going to be the crowning glory.

How rude of that woman. Apple cake is one of my favourites and with raspberries even better. When you said near the end “she’s trying it” I just knew she was the one lol. Carlo as usual doing amazing work to the pool area. He really is so clever with all his DIY stuff ❤️

Carlo is all loving and gives of himself to everyone. He reminds me of my husband who can fit and make anything around our home. He's not able to do as much as he used to now, because of a back pain from an accident years ago. I know Nicki appreciates Carlo for all he does, because things can change suddenly. Wishing you love and warmth in your new home. You guys have put so much into it and how wonderful! It looks now and that new pool FANTASTIC!

Carlo did a super job building the pool wall with recycled materials. I love the door that allows access to the filter system, pump, and motor. Also the new steps with the little tree in the middle! Meanwhile while you were preparing your cakes, pie, and garlic bread, I was again admiring your beautiful kitchen. Your home in Tuscany is so gorgeous! Your apple-raspberry cakes and lemon meringue pie looked tasty!

I know you two had lots of help with this pool but that Carlo is a keeper. He is so talented and learning about new projects seems to come so easily for him. You are lucky!! Many of us do not have husbands that are interested in the least about these type of projects. ❤❤

The years Carlo spent maintaining the grounds of the cemetery in Positano show in his work ethic at your Tuscany home. I love how the tree was salvaged in the center of the steps by the pool.
