Fun fact it old versions of Minecraft you actually could shoot an arrow through the holes in you oak and iron doors even mine blocks just outside them through the holes. I died many times because skeletons would snipe me through my door

I think the nether portal and golem thing can be explained with update order. When a block is placed it will cause a block update for the 6 blocks around it, and it will do the updates in a certain order. I think it updated west first but I'd have to check. But I definitely know that up and down are not first which is why placing that pumpkin spawned a snow golem.
EDIT: when I built the iron golem and snow golem contraption with the iron golem sideways it still spawned a snow golem so in a situation like that the game just always spawns a snow golem

The reason arrows don’t go throw doors/trapdoors is because we put a hidden clear glass that you can’t see just like the villager coat. We might make it to where you can do that but it’s unlikely in 1.19 and 1.20
