I also prefer the method of cast on you demonstrated whereby you do not have a slip knot. By experimenting, I found another way of beginning the cast on that gives me two stitches without a slip not. I hold the yarn in my left hand ready for the long-tail cast on position, but, before I start I hold the long tail yarn and the working yarn between my thumb and index finger in my right hand. Then I move my left hand over the two taunt strands of yarn until two loops form over my index finger and thumb. Put these loops onto the knitting needle and, voila, two stitches to begin the long-tail cast on.
