Here is my simple thought between Hydraulic and Mechanical disc brakes base on my own experience from riding road bikes, mountain bikes, motorcycle & scooter.
Hydraulic disk brakes provide more braking power because they have a greater contact area, which supports heat dissipation. They also rarely fail, making them reliable at high speeds and work better compared to mechanical brakes in wet and muddy conditions. Also you can get better modulation which means you can have better control of your speed when you need to.
