Food handlers can spread germs from their hands to food. When someone eats the contaminated food they may become sick with a foodborne illness. Proper handwashing is one of the most important things a food handler can do to keep the meals they serve safe.

A Flash of Food Safety is a video series designed for school nutrition professionals. This installment reviews the importance of handwashing.

What about washing hands in the kitchen vs the bathroom before touching food? I’ve banned family members from cooking or making salads because they only wash their hands in the bathroom.

When I was learning how to cook at home after my mom died, I cooked some chicken that was past its prime. I was sick as a dog for days. My dad never did get sick, and I figured he just had a cast-iron stomach. Years later, I realized I got sick because I handled the raw chicken. Could not eat chicken for a year after that. Just lucky I didn't kill us both.
