80% bread flour
15% whole wheat flour
5% rye flour
70% water 1
15% levain
5% water 2
2% salt
20% cheddar
15% jalapeño

Autolyse flour and water 1 - 1 hour
Mix in the levain followed by most of water 2 followed by the salt with the rest of water 2.

Bulk fermentation - 3 hours with 1-2 folds

Preshape, final shape then give them a cold overnight ferment.
Bake in a hot oven with lots of steam (you might set the smoke alarm off just a heads up).

Is any body willing to send me some sour dough starter I will pay for it let me know I would love to make my own breads I do make soda bread but Ide the sour dough when I was on sanfrancisco I would eat it all time
