I Done a few sprinter broadcast van builds a few years back. The plastic trunking running along the LH side can be pulled off, unplug the loom from the lights and the earth stud. The loom can be re-fed between the roof cross supports and skin in the strengthening grooves in the roof skin panel.
Tape the connectors to a steel rule to feed them through the gap.
Made lining the van much easier.

I'm so exited to see the conversion process! Still dreaming of doing this myself one day... As for the couch, you could look at using a (used) baby-matress as a cushion. My parents used those for the couch they hand-built for in our livingroom and they are very comfortable!

Very exciting! Having the fridge up high is a great idea, just be aware the van walls curve in more at the top meaning it's forced more into the room. But worth it I reckon just so access is easy.

Some Westfalia factory built campers can be had with the fridge high up like that just close to the bed area. We do in our Westfalia Amundsen 640. The buzzing was a bit annoying the first few nights but now we've gotten used to it, I'm sure you will as well!
