Looks great based on a YouTube video, I made something very similar but with carrots and beets instead of squash and peppers, and it made a nice sub for tomato sauce (which I am not supposed to eat). Will try your recipe. It really looks delicious

Yumm..! I do something similar and add silken tofu (for protein) and lots of ginger, and a bit of nutmeg and / cinnamon for a slightly sweet taste.

To be extra lazy, I just cut the squash in half, scoop out the seeds and cook it with the skin on. It's pretty easy to scoop out the flesh after it roasts and then I get to skip the peeling step.

slice the squash into rings and peel. Much easier . You can also just roast it and peel the skin off when it's cooled down.

I have made a sauce nearly identical to this but I did add the cashews And a box of Mori Nu extra firm silken tofu. Sooo creamy!! Good protein, too.

The thing I missed most when I went Plant based was the traditional holiday meals of the past! Took me forever to get some recipes I liked to replace them. Why use garlic powder when you already have put in several garlic cloves? And as a vegetarian use nutritious onions instead of powder. Cooking them until they are soft and look glassy (not brown at all!) will add a lot of flavor. Wohooo!
