Monster Mac:
12 ounces elbow macaroni
1 cup cooked spinach

2 cups milk (whole or plant-based)
1⁄2 tsp salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
2/3 cup grated cheese (Parmesan or plant-based)
2/3 cups shredded white cheddar cheese (regular or plant-based)
1. Cook macaroni and set aside2. In a blender, combine spinach, milk, garlic powder, salt, pepper, and parmesan.
2. Blend until smooth.
3. Mix sauce into pasta
4. Sprinkle with cheddar cheese and broil for 3-4 mins until cheese is melted

Monster Meatballs:
1 cup breadcrumbs
1/4 cup ketchup1/2 cup minced onion
1 lb ground beef or plant-based ground meat1 tbsp Worcestershire sauce

2 eggs (or flax "eggs" by combining 2 tbsp ground flax seed with 2 tbsp warm water)
1 tsp Italian seasoning
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/4 cup olive oil
Sliced white cheese, cut into circles
Black olives, cut into circles

Tomato sauce for serving

1. Combine all meatball ingredients together and form into medium size balls
2. In a skillet on medium heat, fry meatballs with olive oil on all sides (about 7-9 minutes), then transfer to the oven at 350F/190C to finish cooking, about 10 more minutes
3. While meatballs are cooking, make monster “eyes” by cutting cheese and olives
4. Place cheese & olives on meatballs and serve with tomato sauce or monster mac!
