30 Minute Shepherd's Pie

Ingredients

2 pounds potatoes, such as russet, peeled and cubed
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

Directions

Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.

While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

Aww this episode was from 2003 - the Good Ole Days of Food Network- I would watch 30 min Meals Everyday at 2 and 2:30pm.

Almost never watch the Food Network anymore. Too many game shows, baking contests, etc. Its no longer a cooking channel but more of a game show channel. Not interested anymore. I guess it’s another race to the bottom as those game show-contest shows are cheaper to produce.

I learned to cook by watching 30 minutes meals. My kids actually are the good I cooked. And now my son is a Chef. Thank you Rachael Ray.

I watch this now as and adult and I just feel so nostalgic but like it’s cracking me up watching her rush around and fiddle with the utensils and like the way she just eyeballs everything and throws stuff around it’s hilarious as an adult. I never noticed it as a child 😂

THAT's the Rachel I remember getting hooked on. She was a pixie in the kitchen and you can see her enthusiasm and love for demonstrating cooking all kinds of dishes. I think this was pre-John and she was quite a dish herself. Rachel is obviously a person of determination and love of being busy. She was in her element.

The good old days of the Food Network where people cooked. Rachel Ray, Iron Chef, Paula Deen, Good Eats, Molto Mario, etc. were all so great. Now it's reality and game shows. Hard pass.

Watching this in 2021! Wow! I love this recipe for shepherd's pie. Yummo! Rachael has changed as we all have. We get happier, older & we spread out lol... Also her voice is clearer, because she wasn't working so damn much as she is now to keep up with everything she has accomplished.

Wow when I was in 3rd or 4th grade I used to run home after school, call my friend and we would watch this everyday. Brought back some good memories.
