these diy mounds bars are gluten free, dairy free, paleo, and refined sugar free, and sooo good. they taste so much like the real thing!

ingredients
•2 cups unsweetened coconut flakes/shreds
•1/4 cup sweetener (use raw honey or pure maple syrup)
•1/4 cup coconut oil
•1/4 cup full fat canned coconut milk
•6oz dark or semi-sweet chocolate (i use dairy free and refined sugar free)

instructions
1. first, melt the coconut oil. next, add the shredded coconut, coconut milk, sweetener, and melted coconut oil to a food processor and process for about a minute, scraping down the sides as needed.
2. once smooth, add the coconut mixture to an 8x5 loaf pan lined with parchment paper and smooth it out then place in the freezer to harden for several hours.
3. once the coconut mixture is frozen, melt the chocolate in the microwave or on the stovetop using the double boiler method (i recommend adding 1 tsp coconut oil to the chocolate to help it melt smoothly and thin it out).
4. once the chocolate is melted, remove the coconut mixture from the freezer and slice into 6 bars.
5. coat each coconut bar in melted chocolate then place on a tray lined with parchment paper.
6. place the bars in the fridge until the chocolate hardens, then dig in and enjoy! store in the fridge or freezer.
