Ingredients:
For kneading water-
3 cups water, 1 tablespoon Anise seeds, 1 tablespoon Coriander seeds and a large stick of cinnamon. boil and then add water if needed for the correct measure of liquids needed for the recipe.
For the dough- (double the recipe to make 5 loaves)
5 cups flour (I used bread flour)
4 teaspoons yeast
1/3 teaspoon salt
1 tablespoon ground anise
1 tablespoon ground coriander
1 teaspoon Mehlepi (optional but recommended)
3/4 teaspoon Mastixi
1 cup less 2 tablespoons sugar
1/3 cup oil
a little less than 2 cups of warm kneading liquid.
