Ingredients
- 2 cups basmati rice
- 1500 grams chicken or mutton (bone-in or boneless)
- 2 large onions, thinly sliced
- 2 tomatoes chopped
- 1/2 cup plain yogurt
- 2-3 green chilies slit
- 1/4 cup biryani masala
- 1/4 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 4-5 cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- 4 tablespoons ginger-garlic paste
- Fresh coriander and mint leaves
- water
- oil or ghee
- Salt to taste

Instructions
Wash and soak the rice for 30 minutes.
Heat oil or ghee in a pot and add the whole spices cumin seeds cloves cardamom cinnamon bay leaf Add sliced onions and sauté until golden brown.
stir in ginger-garlic paste followed by tomatoes and cook until tomatoes are soft.
Add chicken or mutton spices biryani masala turmeric powderred chili powderand cook until meat is browned.
Mix in yogurt and cook for a few minutes.
Add water and bring to a boil then simmer until the meat is tender
In another pot bring water to a boil, add salt and the soaked rice, and cook until 70% done.
Layer the partially cooked rice over the meat add fresh coriander and mint leaves and cook on low heat for 45 minutes
Serve hot with raita or salad
