This is Indigenity. Adapting the authenticity to the native culture and tradition and the materials available. They can't make sticky rice as the rice used for it isn't readily available. The chicken they eat is sweet. The jjajangmyeon isn't Buldak (its out of stock). Just for clarification, they have a greenhouse and a terrace garden where they plant their essential vegetables and fruits. I am quite sure of this because I have seen these in person. As a person who loves korean food and has tasted authentic versions, I can guarantee this is exactly how korean food tastes and everything available at KCC are authentic

Just because it is expensive, please do not slander the food that maybe the favourites of many !

Its short grain rice you can make sticky rice with any rice depends on the starch levels so its sticky rice isnt a type of rice its a cooking method.

Try "seoul restaurant", 3rd floor, Ansal Plaza mall. Everything that they have including the meat and the spices, even the cutlery, is imported from korea. Very underrated, but this is my go to place everytime

In delhi if you want korean food go to either safdarjung enclave or MKT they have really good korean cafés and more aesthetic too. As of korean culture centre, their kimchi fried rice and corndog are really good
