Making smooth, tender, and yummy traditional Chinese fish balls at home is quite different, but it is really worth the effort.
When I think of making curry fish balls or fish ball soup, the first thing that comes to mind is purchasing store-bought fish balls. The idea of making those fresh balls at home never occurred to me until I got fresh mackerel shipped this winter. Food is a good record of life, and I know it is the best time to start the journey.

——Ingredients——
Pure fish meat 1000g, I use frozen mackerel this time
around 350g or 400g iced water, divided (200ml for smashing and 200ml for blending)
2 tbsp. cooking wine
4 tbsp. sugar
3 tsp. salt
4 middle size egg whites
4 tbsp. cornstarch (optional)

I tried this recipe with frozen boneless basa from Costco. It doesn’t taste anything and the texture was smooth but not bouncing...like it suppose to be. I found in another blogger video that salt is very important and react with the protein to create and create the bouncing texture. We end up trippling the salt quantity and it was perfect. We also add chopped green oignon which gives a little bit color . The recipe gives almost 95 fish balls : )

My mom always made this from scratch when I was a kid and knead the paste by hand. She advised that only a certain type of fish is ideal to make fish balls with. I think it is Mackarel, but she doesn’t know the English name.

Could you substitute crab for fish? Also, how long are they in warm water for, it says until floating, but don’t they float from the start?
