instead of the white rice, you can use black rice or wild rice, and instead of potatoes, you can do sweet potatoes and squash if you're concerned about nutrients.

Fruits are not the superior carb source. Fructose is mostly stored in your liver which means that only a small portion of it is used as fuel for your muscles. Rice and potatoes will provide better fuel for physical performance by far.

I looked into it a few years ago when the hate on red meat peaked after the WHO released their self-proclaimed comprehensive meta-study report on it and uttered the advice "red meat causes cancer". The issue is not red meat, but rather processed meat. If you actually get to the primary sources, many of the studies covered by their report were not clearly distinguishing between the two which causes false cause/effect attribution and from my point of view renders the WHO report worthless.
If I recall correctly their first version release was even more intentionally rabble-rousing. They corrected a few things and relativized some of their statements. The problem with this: The media had already picked up on the first report, because of the strong headline "(red) meat causes cancer". Almost no media outlet will put the same emphasis on a correction of that statement. I'd go so far to argue that this was by design to fit their agenda.
Yet, the things to avoid clearly are: brined, cured meat, as well as smoked meat. Equally avoid extensive charing when frying. I'd go so far to argue that living in an air polluted area will have similar effects. Same with heating with a wood fire stove or fireplace. As soon as you can smell the typical "wood fire" smell you are inhaling particulates. If you want "smoky" flavor get it in liquid form as a flavor enhancer. The companies making such smoke liquids have much stricter control thresholds for cancer causing contents.
