Pro tip: When you get pho (or any other rice noodle soup) to go and you're eating it at home, always reheat the soup (only the soup) to boiling and pour over the noodles and toppings. I guarantee you will have a better eating experience. They always serve piping hot soup over separately cooked noodles, so no matter how close you live, the soup will become too cool for the noodles. Any good restaurant will cook their noodles to the texture that will withstand super hot soup, so if you pour warm or almost hot enough soup that didn't just come off the stove, it'll have an off texture and taste because broth soup also tastes better hot, none of the fat and collagen will have congealed and you'll get the full spice aroma. I’m Viet and Bo kho is one of my fav 🤤 what I like to do is get the bread, hollow it out and save the insides to dip later, and fill the hollowed bread with the meat and broth and carrots and any other stuff in there 😋
