My mom would add small crunchy chopped pieces of pickles instead of celery and some paprika. Hers was the best growing up! My friends still talk about it and we’re 42 now.

Yes the secret is mashing some of the potatoes- my friend’s mother taught me this about 25 yrs ago and I have done it ever since. It makes a big difference no matter what type of potato salad you make-

Potato Salad is amazing warm minus your cilantro add pickles, and it's GREAT cool or warm.

I used to make it similarly. I put pickles in . No cilantro and no crema, no lemon I used Hellman's mayo and some Dijon mustard

Here's one my grandmother made, diced potatoes boil until tender enough to mash with a fork add:

Sliver sweet onions
Quartered and diced peeled cucumbers
Diced hard boiled eggs
Miracle whip
A small dab of mustard
Black pepper
Salt

All to taste

It is the most refreshing potatoes salad I've had.

Our favorite is what we call 'Pink Potato Salad' basically it regular potato salad, but you use Red potatoes, Red Beet Eggs & some red beets

So the Mexican addition to what I see classic American Style, is Cilantro, and cheese? I do like adding fresh jalapeno (minced) to potato salad occasionally, and a modern version of coleslaw (use an avocado/guac for your dressing). The addition of the jalapeno adds a BRIGHTNESS you aren't expecting. Doesn't add heat, just fresh bite.

Bake your potatoes ahead of time, stick them whole in the fridge overnight. They are easy to cut up and they don't fall apart when you mix everything!

I will have to try this recipe. I love potato salad. But I like it better when the potato salad is hot, before the potatoes are cool down.
