The CabaRay is such a wonderful place! Those red leather booths are named for those record producers that Ray spoke of in that video clip. It's a fabulous, pictorial time line of the people involved in Music City, USA when Ray was coming up and as you heard he either worked for, with, or knew, all of the people on those walls. If this is your first time seeing this video you should go ahead and look for others on YouTube, too...this one doesn't show the stage set-up and you don't see how close he is to the audience during a performance.
