Smoked Bologna - Smo-Fried Twist on a Childhood Classic

Smoked Bologna is a delicious and cheap sandwich which takes me back to my childhood. My Granny in Alabama made me fried bologna sandwiches. She cut slits in the bologna and fried it in a skillet and simply served it with mayo on white bread.

Fast forward to present day and I choose to add a smoked element to it and pay tribute to all the cooking she taught me. The end result is a smo-fried bologna sandwich that is awesome! I've made this recipe with cheap bologna and all the way up to very expensive bologna. To be honest, I like the $8 chub from a local grocery store the best. The leftovers will save for a while and my family usually eats on it all week. We hope you enjoy it as much as we do!

It’s also awesome to throw your slices in a deep fryer as a change up from pan fried!

I worked with a guy back early in my firefighter career, that when we worked together would go to the local meat counter at the market and have them cut us bologna slices as thick as they could somewhere from 3/8 to 1/2 inch then take them back season them and put them on the grill. Once done add some sliced pepper jack cheese bbq sauce then make the bologna burger. Lettuce tomato onion and chow down. Thanks for the video brought back great memories.

Pro Tip: Run your boning knife through a bed of yellow mustard (blade edge) and slice...this way you can easily see your cut marks as you go if your're OCD as hell like myself lol

I smoked two chubs and they were delicious. I had some leftovers so using my Alabama roots, made what I am calling Poor Man’s Stew. I cubed up the balogna and used it in a black-eyed pea soup with collards. I used onions, garlic, lentil, carrots, celery, smoked paprika, red pepper flakes, chicken broth and ham broth, fire roasted tomatoes and collards. It was more of a stew than a soup. Even my New York husband loved it. The seasoning on the bologna added some flavor and of course I used Holy Cow instead of salt and pepper. It was great with cornbread!

I smoked my bologna chub today to 180°. It came out perfect and the Gospel rub tastes great on it. My fried bologna sandwich was wonderful. I fried the bread on both sides like you would if you were making a grilled cheese sandwich. I used miracle whip and lettuce and tomato on it. Another great recipe from Meat Church. Great Job Matt!

Mom used to make bologna sadwitch fried like a schnitzel, dipped in egg, flour and bread crumbs. One of the best childhood meals I still remember 50 some years ago. Love it.

I have four or five of those cast iron skillets. Just like that are my late moms. She used to do bologna just like that fry it up cut the ends so it wouldn't make a mess. That's some good eating right there

Matt I have smoked many chubs of bologna. I love how after it is smoked how its taste Changes for the better. It will have a complete different tastes and my neighbors and I love it. All the smoking that I love to do I share with my good neighbors and they really enjoy when I smoke the bologna.

Shout out to Levi! Lol! My grandma used to make us fried bologna sandwiches with tomato soup. I still make it for my grown up kids. Comfort food.
