This year I'm going to share with you a new Christmas Cookie Box Recipe you can do with just one dough to get many cookies. The Cookie dough is made with just 3 ingredients, but the greatest thing is that you can make multiple cookies, by just adding different kinds of toppings such as chocolate, coconut, nuts, dried fruit, etc. This Eggless Butter Cookies recipe is a very easy way to make a fantastic Christmas Cookies Box 2022 for your family or friends.

Types of Butter cookies:

1. Chocolate and Orange
2. Chocolate and Dried Raspberry
3. Chocolate and Pistachio
4. Pistachio and Dried Raspberry
5. Chai Spices
6. Matcha and chocolate
7. Chocolate and Almond Flakes
8. Chocolate and Coconut
9. Dried Cranberry

Butter Cookies Dough:

butter (room temperature) 225g.
caster sugar (or confectionery sugar) 100g.
flour 250g.

Toppings:

dark chocolate (melted) 100g.
chopped pistachio 100g.
dried raspberries 50g.
some almond flakes
some coconut flakes
1 teaspoon of matcha powder
1 teaspoon of chai powder (or cinnamon, ginger, and cloves powder)

Instructions:

1. In a large bowl, mix the butter with sugar for 5-6 minutes and it becomes creamy.
2. Add the flour gradually and combine.
3. You can divide the dough as you wish. If you want to follow my full recipe, take 210g. of the dough, wrap it in plastic wrap and let it rest in the fridge for 1 hour. You will need it to make the Chocolate and Coconut cookies, the Chocolate and Pistachio ones, Chocolate and Almond, and Chocolate and Dried Raspberries.
4. With the dough left, divide it into 5 parts (each should have about 70g).
5. In one, grate some orange zest. In the second, add some pistachio and dried raspberries. In the third one, add dried cranberries. In the fourth one, add one teaspoon of matcha powder, and in the last one, add a teaspoon of chai spice powder.
IMPORTANT: Remember, if you don't have all these toppings, just use those you have in the pantry: lemon zest, nuts, raisins, etc.
6. Wrap each dough and let it rest in the fridge for 1 hour.
7. After one hour, take out of the fridge one dough at a time and roll it out easily. If it breaks quickly, you can use the pressure of your hands.
8. Use your favorite cookie cutter, place your cookies on parchment paper and let to rest for 10 minutes in the fridge before baking.
9. Bake your butter cookies in the preheated oven at 160°C for about 12 minutes. Let them cool down completely.
10. Once ready, decorate them as in the video.
11. Remember to let them dry completely, ideally overnight in a cool place.
