Beer Battered Onion Rings

My onion rings are fried in a beer batter seasoned with garlic, paprika, and chili powder. Make these crispy bites in less than 30 minutes!

Ingredients
2 large onions, cut into 1/3-inch thick
3/4 cup all-purpose flour
3/4 cup cornstarch
2 tsp kosher salt
1/2 tsp baking powder
1 tbsp garlic powder
1 tbsp smoked paprika
1 tbsp chili powder
8 oz beer (or sparkling water)
oil for frying
Serve
Dipping Sauce of choice
Instructions
Prepare a large bowl with cold water and 2 cups of ice. Set aside.
Trim ends from onions and slice into 1/3 to 1/2-inch rings. Remove the skin and press out the onion rings to separate. Remove the inner membrane from each (See Note 1). Place onion rings in ice bath and make the batter.
In a bowl whisk together the flour, cornstarch, salt, baking powder, garlic powder, smoked paprika and chili powder.
Heat at least 2-inches of oil in a sauce pan to 350°F. Line a serving plate with paper towels. Set aside.
Remove the onion rings from ice bath and pat dry with paper towels. Dip them in the flour mixture to coat and set aside. Add the beer or sparkling water and mix to form a smooth batter.
Dip the onion rings in 3-4 at a time to coat in the batter and carefully drop into hot oil. Cook 4-5 minutes and flip. Cook another 3-4 minutes until crispy and golden brown. Transfer to prepared plate and repeat with remaining onion rings.
Serve with your favorite dipping sauce.
Note
1. If you don't remove the inner membrane, once bitten, the onion often times pulls out of the crispy coating.
