to explain why peach seems to retain her mind post-zombification, remember that she is, and has always been, a powerful white mage in canon. similarly, bowser is just as skilled a sorcerer as he is not the kind of guy you'd expect to know that sort of stuff. it’s how he breathes fire and summons all those hammers in the original game.

The end was amazing. And it kinda makes sense too.
Becoming a Zombie reduces you to your most basic instincts - and in Peach's case, it seems to be providing cakes for Mario. That's not sustainable long-term though. She will continue to rot and that can't be healthy. So eventually our plumber will be infected too. Not by bite, but by ingesting bits and pieces of the "Zombiempress" Peach via the cakes she makes
