Taal (Asian palmyra palm) তাল

Scientific name Borassus flabellifer is native of the Indian Subcontinent. It is the official tree of Tamilnadu state in India, primarily because of its usefulness in daily life, in fact all part of the tree. This exemplifies the fact that it is intimately associated with Indian way of daily life. The soft mesocarp pulp orange-yellow in colour of the ripe fruit is sugary with a slightly bitter after taste because of the presence of flabelliferrins (a type of steroidal saponins which has got prominent anti-inflammatory property). The sweet jelly seed sockets of the still unripe fruit are also a very sought after edible part of the fruit. The plant is famous also for its sap which is harvested for its sugary sweet taste and also for fermenting it into traditional alcoholic drinks.
The Bengali way of having it is using the fruit pulp by frying (তালের বড়া) or mixing it with condensed milk (তালক্ষীর).
