Reminds me of the “spanish thistle” that is a delicacy here in North Africa. Traditionally served with couscous, but I love to have it in omelette ! So good !!! ❤

The genus Sonchus is Greek for hollow describing the stems. The Ch has a hard k sound.
It is sow thistle because pigs eat it. It was searched for and gathered for them.
Pronounced like "cow" not "so"

Question does it grow in Chicago remember it's already August so again can I find it one Chicago to in August there's always a learning curve I'm not worried about that I want to try relieving my mom's pain and my own shes 88 I'm 53 I hyper-extended my big toe in a bike crash years ago but it's now bothering me yeah I'm old 😂
