Nokedli are easy Hungarian dumplings that come together from just 4 ingredients in a matter of minutes. NOKEDLI RECIPE

Makes 4 servings

140 grams bread flour (about 1 cup)
1/4 teaspoon salt
2 large eggs
2 tablespoons sour cream (or yogurt)
2 tablespoons milk (you may need more or less)
Butter or olive oil (for serving)

My nagymama would scrape little bits of dough from a plate into the boiling water with a fork. It was mesmerizing to watch. She always made nokedli with her pörkölt.

Regarding the "traditional recipe" topic... I'm also Hungarian. My grandma used to make Nokedli without sour cream.. It is the "traditional recipe" for the simple reason that sour cream was expensive and there was no reason to waste it on Nokedli... That said, it tastes better with some dairy, so I use dairy. Simple as that.

Just finished making these and chicken paprikash. Took a bit of practice to get the dumplings off the spatula but I got there quickly...tossed in butter and totally delicious!!!

My husband is Hungarian and grew up eating this with chicken paprikas. I'm going to practice a few times before I make it for my mother in law!

My grandmother was Hungarian and made her dumplings with milk and sour cream to give it a buttery richness, that's how I make them. They are scrumptious!

My grandmother in Transylvania (Hungarian/German speaking Transylvanian Saxon) made these, the dumplings are my favourite along with chicken schnitzel which I thought was a dessert 😄 It’s cool to see someone not Hungarian making these!

Hungarian paprika chicken is such a great dish. I've only just found it and it's becoming a regular. We're Indian household, it's difficult to introduce new recipes.
The dumplings reminded me a few foods we make. There's a cylindrical extruder used to make similar sized balls. Also a perforated ladle.
Was serving the chicken with pasta but think I'll give this a go.

Cool, the other recipes I found for these all used a pasta grater, but I only have a cheese grater. Good to see your technique to know that it will work no problem. Can't wait to try it out! I went to Hungary recently and had a lot of really good dishes that were served with nokedli, so I want to try making some of them at home.

you can mix it with some omlette and eat it with letucce with sweet-winegary dressing (one of my favorites)

I’m sure there is various recipes and variations of these dumplings. I’ve tried many different versions within the European countries and one can prepare these dumplings based on your personal taste and finishing with butter, oil, gravy’s or chicken fat renderings.

I found a better way to extrude those dumplings. I found an old grill topper pan that has the right sized holes, exactly the same size as the holes on a dedicated spätzle maker. I put that grill topper over my boilng water, put a bunch of the batter on it, and push it around using a bench scraper or dough card. This drops perfect sized drops of the dough into the water, and is remarkably not labor intensive. I managed to use up all my dough in a matter of a minute or two primarily because the grill topper has so many holes that the dough drops through with one or two passes of the bench scraper.

Or you can mix the leftover nokedli with sime scrambled eggs, it's a meal in itself. We often eat that in Hungary with some fresh leafy green salad as a side.
