Halloumi Fajita
Serves 4
1 tbsp olive oil
1 onion, chopped
3 mixed peppers (I used yellow, orange and red)
1 tbsp smoked paprika
1 tsp chilli powder
1 tsp ground cumin
1 tsp oregano
1 tsp garlic salt
2 x 225g halloumi blocks

To serve
8 small tortillas
1 avocado
Lime wedges
Fresh coriander
Sour cream
Salt and pepper to season

Method
1. Heat a pan with a bit of oil and add in the onion and cook this for around 5 minutes
2. Then add in the peppers and cook for 10-15 minutes until softened and starting to brown slightly
3. Push the peppers to one side of the pan and add in the halloumi then sprinkle over all the spices and garlic salt
4. Cook this for around 5 minutes turning every little while until they start to go golden brown, then set the aside.
5. Mash the avocado in a bowl with a bit of lime juice and salt and pepper
6. To serve spread the avocado on a tortilla, top with the halloumi and pepper mixture and sprinkle over coriander, sour cream and squeeze over some lime juice!
