I can tell you how it most likely works. It’s probably got a small camera connected to a computer running image processing looking for certain coloured pixels which when pixels are found that match the desired input it activates the arm that best fits the coordinates and removes them.

That machine is actually called a color sorter and it takes pictures of every single potato and when it registers a color that you don’t want it will kick it out simple but insanely handy
