Preheat oven to 400°
Cut 8 redskin potatoes into cubes
Coat with 1 Tbsp grapeseed oil
1/2 tsp sea salt
1/2 tsp smoked paprika
Air fry or bake for 25 minutes & set aside

Scramble
Combine
2 bottles just eggs
2 drained and slightly pressed extra firm, organic tofu blocks
1/4 c nutritional yeast (optional)
1/2 tsp black salt
1/2 tsp black pepper
Plant based cheese of your choice

Melt 2 tbsp butter
Add mixture and cook on medium high for 20-15 minutes. Salt and pepper to taste.
Remove cast iron skillet from stove, add potatoes, then scramble and top with more cheeze. Put skillet in oven until cheeze melts, about 5-7 minutes. BE CAREFUL!

Remove let cool for at least 5 minutes!
